So two months ago Jeroen and I decided to — oh so finally — join a local farmer for weekly straight-from-the-farm organic vegetable and fruit packets. And wow, their fruit and veg are a truly wonderful gift from the Earth.
We never had such beautiful beets before, such crispy carrots and tasty turnips! (Did you see that? I used to be a poet.)
If you're used to eating supermarket veg like me, making the decision to buy straight from a farmer will probably be the tastiest life change you will ever make.
Anyways. Where I wanted to go with this, is that this variety of local and seasonal veggies in our weekly packet has been challenging me to try out new recipes that include various root vegetables. In our veg packets there's always one or two root vegetables, ranging from classics like beetroot, carrots and turnips, to how-the-star-will-I-use-these daikon, parsley root and... big ol' celeriac.
Celeriacs are huge. The question is: how do you turn these big boys into a tasty dish?

Did you know that celeriac can perfectly be eaten raw? Eating your roots raw will provide your body with even more of their nutritional goodness, which would otherwise diminish along with the cooking time. Consider this slaw as the healthified version of the famous carrot-celeriac-mayo slaw. I bet this one goes great with all of the other dishes above! Simply grate any leftover celeriac together with a carrot, add cashew mayo and you're on.
