I'm writing this in between the many cover letters I've been writing during the past couple of weeks. Ahh, searching for a job can be exhausting and at times, it challenges my feelings of self esteem.
Looking for a job is a full-time occupancy. I mean, it takes a lot of time to find, and apply for, an appropriate job. And when I'm invited for an interview, I pay for travel expenses too. And that's not cool, yo. If your bank account is empty already, every euro spent is one less for next month's rent.
Nah. I'll keep going. As long as my health is good, I'm able to stay positive. I CAN DO THIS.
Now! Let's get to the recipe. This autumn-inspired salad is really easy to put together, and it contains a diversity of healing vitamins, minerals and phytonutrients. Perfect for a quick in-between-job-interviews lunch.
You can make this salad with any local in-season leafy greens that you have available where you live. Here in Belgium, 't is the season for lettuce, radicchio, carrots & cabbage. So this salad is basically a pile of these with some extra tasty herbs and condiments.
All the ingredients in this salad work together to protect your skin from the inside out. Olive oil, apple cider vinegar, sauerkraut, sprouts, carrots, avocado & pumpkin seeds are all ambassadors of a strong and healthy skin.
Did you know that radicchio is especially good for your skin? Fresh radicchio is an excellent source of zea-xanthin and lutein as wel as vitamin K — micronutrients that all make your skin glow from within!
Healthy Skin Autumn Salad w/ Raw Carrot Salsa & Sauerkraut (serves 1)
- A big handful of lettuce & radicchio leaves
- Some olive oil + balsamic vinegar
- 3 tbsp sauerkraut
- Your favourite sprouts
- 1/2 avocado (sliced + sprinkled w/ herb salt & black pepper)
- Optional: extra pumpkin or sunflower seeds for protein
For the carrot salsa:
- 5 carrots, finely grated
- 2 tbsp apple cider vinegar
- 2 tbsp lemon juice
- 2 tbsp orange juice
- 1 tbsp olive oil
- 1 tbsp dijon mustard
- 1/4 tsp raw sea salt
- some freshly cracked black pepper
Prepare carrot salsa:
Finely grate the carrots. Add apple cider vinegar, lemon juice, orange juice, olive oil, mustard, raw sea salt and black pepper and mix it all together. Taste it. Not sweet enough? Add more orange juice. Not tangy enough? Add more apple cider vinegar and/ or mustard.
Putting your salad together:
Slice lettuce and radicchio and sprinkle with olive oil & balsamic vinegar.
Add the carrot salsa on top of the salad leaves, but leave some space around the edges.
Add sauerkraut on top of the salsa.
Now add some sprouts on top of the salad leaves around the edges and finish with a couple of slices of fresh avocado. Sprinkle the avocado with herb salt & some pepper.
Sprinkle some sunflower and/or pumpkin seeds on top and you're ready to enjoy this nutrient bomb!
